As part of the Sodexo Future Chefs National Challenge, Felicia has created a fun healthy salad for submission to the local competition in her school district. Bon Appetit!

Chicken Salad

Mix in a bowl.
Then place on cut-up spinach bedding.
Pour sauce if wanted.

1 Cup Corn Kernels
1-1/2 Cup Black Beans
1/2 Cup Cut Spinach
1 Tablespoon Fresh CIlantro
1 Cup Cooked Chicken Breast (chopped)
1 Cup Diced Mango


Mix in food processor until well blended:

1/4 teaspoon Cumin
1/4 teaspoon Garlic Powder
Juice of one Orange
Juice of one Lime
2 Tablespoon Fresh Chopped Cilantro
1/4 Cup Olive Oil
1/4 of one Avocado
